Some foods which are perfectly fine for one person to eat can be dangerous for others. These people suffer reactions to specific foods which can vary in strength from mild to life – threatening.
It is, therefore vitally important that all people preparing or handling food, in any context, are fully aware of the foods that may trigger an allergic reaction and what precautions need to be taken to ensure the customers/clients do not eat a food or ingredient that they are trying to avoid.

Course Description

There are 14 allergens which are recognised across Europe as the most common ingredients causing food allergies (although there are over 150 foods worldwide which have caused allergic reactions) these are called the EU top 14 allergens.

Food Information Regulations

Came into force on the 13th December 2014, applies to all food service organisations serving, cooking, or selling foods. Food service companies must provide accurate information about the EU top 14 allergens.  In fact everyone providing food in a catering setting will have to adhere to the new regulations.
